Here are 5 recipes that will transport you around the world without leaving your kitchen. 

  1. Crispy Fish & Chips

Ingredients

4 large potatoes

1 cup all-purpose flour

1 teaspoon of corn-starch

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon ground black pepper

1/3 cup sparkling water, cold

1 egg

500g cod fillets

How to prepare

Mix in a bowl flour, baking powder, salt, and pepper then stir in the sparkling water and egg and let it rest in the fridge for 20 minutes.

Then cut the potatoes into strips and rinse under cold water and then boil them for 3 minutes.

Drain the potatoes, cover it and place in the fridge until you prepare the fish.

Heat the oil to deep fry your fish. Dry the fish fillets and season with salt. Place 2 tablespoons of flour in a bowl and then toss each fish fillet in the flour. Then dip into the batter you prepared earlier then fry.

Get your fries out of the fridge and fry.

Serve hot with your favourite condiment.

Don’t be intimidated by the word Pad Thai, because this recipe is very easy, quick, and most importantly delicious.

Ingredients

200g rice noodles

4 tablespoons low sodium soy sauce

2 tablespoons fish sauce

2 tablespoons white vinegar

3 tablespoons honey

1/4 teaspoon chili flakes

450g fresh shrimp

3 tablespoons olive oil

4 cloves garlic

3 tablespoons butter

2 eggs

2 cups bean sprouts

4 green onions

1/4 cup roasted peanuts

Basil for serving

How to Prepare

Cook the rice noodles

In a small bowl, mix soy sauce, fish sauce, vinegar, honey, and chili flakes.

In a large pan heat oil, add the shrimp cook for 2 minutes.

Add butter, garlic, a pinch of chili flakes and black pepper.

Add the shrimp to the butter cook until the garlic begins to caramelize.

Toss in the noodles in sauce, tossing to combine. Cook until the noodles soak up in the sauce, about 1 minute.

The push the noodles to one side of the pan and add the eggs to the other side and cook

Garnish with basil, bean sprouts, green onions, peanuts, and chili flakes.

Add a squeeze of lime juice for extra punch.

  1. Beef Chickpea Tagine

1kg cubed beef

2 teaspoon salt

1 teaspoon black pepper

3 tablespoons vegetable oil

3 garlic cloves

1 yellow onion

1 can chickpeas

450g carrots

3 cups beef broth

2 teaspoons ground ginger

1 tablespoon ground cumin

2 teaspoon ground coriander

1/2 teaspoon ground cinnamon

1/4 cup dried apricots

How to prepare

Preheat oven to 325°C.

Season beef with salt and pepper, then add oil in a pot and sear for 6-8 minutes.

Remove the beef from the pot and add in the onions cook for about 3 to 4 minutes

Add in the garlic, carrots, chickpeas, remaining seasonings, beef broth, and dried apricots.

The mix in the beef, cover pot and cook in the oven for 3 hours.

  1. Pacoca

This Brazilian delight is a great treat for your sweet cravings without spending hours in the kitchen. It consists only of 5 ingredients, takes about 20 minutes to make and has an incredibly satisfying outcome.

Ingredients

10 biscuits

3/4 cups roasted peanuts

2 tablespoons sugar

1 can sweetened condensed milk

1/2 teaspoon vanilla

Dash of sea salt

How to prepare

Ground biscuits and peanuts in a food processor then add in sugar, condensed milk, vanilla, and salt. Mix until dough comes together.

Add dough into square tray, make sure to add baking sheet to avoid the dough from sticking to the tray.

Cover and refrigerate for 4 hours.

Remove from pan and cut into bars.

  1. Tuscan Vegetable Soup

This hearty soup is made will take through a tour of the beautiful city of Tuscany.

Ingredients

½ tbsp. Olive oil

1 chopped onion

1 chopped leek

2 chopped garlic cloves

½ teaspoon dried thyme

1 chopped carrot

2 chopped celery sticks

2 cubed tomatoes

600 ml vegetable stock

2 sprigs of fresh thyme

1 can white beans

20 g grated parmesan

100 g cabbage

How to prepare

Add oil in a large pan toss in onions, leeks, garlic, dried thyme, carrot, and celery and cook for 3 minutes.

Add tomatoes, stock, and fresh sprigs of thyme, bring to boil.

Place the lid on pan and let the soup simmer for 15 minutes.

Then stir in the white beans and fresh parmesan and cook for 2-3 minutes.

 

Next place ⅓ of the soup in a blender and blend until smooth.

Pour it back in the pot with remaining soup mixture, then add cabbage.

Simmer for 5 minutes.
